Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 28-ounce can crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream or substitute with half-and-half for a lighter option
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes optional, for a hint of heat
  • 1 16-ounce package potato gnocchi (store-bought or homemade)
  • 1 cup fresh spinach or kale roughly chopped
  • 1/4 cup grated Parmesan cheese plus more for serving
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Heat oil in a pot, cook onion until soft, then add garlic.
  2. Add tomatoes, broth, basil, oregano, and red pepper flakes; simmer 10 minutes.
  3. Stir in cream, season with salt and pepper, and simmer 5 minutes.
  4. Add gnocchi and cook until they float (about 3–5 minutes).
  5. Stir in spinach and Parmesan until greens wilt and cheese melts.
  6. Serve hot with extra Parmesan and fresh basil.
